Making a Mellophone and Alto Saxophone Soundfont/Sample Pack?

A friend and I are planning to make a sample pack or soundfont style of our instruments. Like I'm not so sure how I would do this. Only mics i have for recording are USB mics from Rock Band and Guitar Hero (logitech Vantage) and the Sing Star ones. Also any idea how I would i would make a sample pack or something. I want it to be where it works with most DAWs and so on. Any ideas?
